If you're like my family, you have lots of leftover hardboiled eggs from Easter. Here's an easy recipe so you can use them up!

Sunday night after all of the Easter eggs had been found, I decided to make Scotch Eggs. I'd never had them before, so my expectations were pretty low. But they turned out great! Here's how I did it.

1. Peel your eggs and wet them with some cool water.

2. Dust the eggs lightly with flour.

3. Take ground sausage (I used Country Sausage) and make some thin, flat patties that are big enough to wrap the eggs with them. Cover the hardboiled eggs with the sausage and make sure all of the seams are sealed tight.

4. Dip the sausage covered eggs balls in some whisked raw egg.

5. Cover the sausage covered, egg dipped egg balls in bread crumbs.

6. Bake those suckers in a 400 degree over for about 30 minutes or until the sausage is cooked and the Scotch Eggs are golden brown. (Technically you're supposed to deep fry them, but that was too messy for me. Baking them worked just fine...)

7. Let them cool, cut them in half and serve them on a bed of butter lettuce. Delicious!
