
A Boise Restaurant Is Celebrating 20 Year In The Community
The Melting Pot in Boise is marking a notable milestone—20 years of delighting the community with its fondue dining experience. To celebrate, the restaurant has undergone a major renovation, transforming its space at 200 N 6th Street into an even more inviting spot for diners to gather and socialize. This facelift is part of the Melting Pot Evolution, a nationwide initiative aimed at enhancing guests' dining experiences across all Melting Pot locations.
The Boise location holds a special place in the city's history, as it occupies what was once Boise's first ever Central Fire Station. The renovation beautifully preserves the historic integrity of the building while introducing modern touches. "We're thrilled to introduce these changes at our restaurant while keeping the historic integrity of the space with pieces from Boise's original firehouse," says Kim Silva, co-owner of Melting Pot Boise along with her husband, Hollis Silva. Kim's journey with Melting Pot began as a server and manager before she took ownership, making this transformation particularly meaningful.
Among the exciting updates, the restaurant now boasts a larger bar area perfect for enjoying a variety of high-level cocktails. The new open floor plan and an expanded patio with 75 additional seats, a fire pit, and lounge seating are designed to enhance the dining experience. Inside, the restaurant features all-new finishes—from fabrics and paint to artwork and lighting—that add a warm, welcoming touch. The party room has also been improved with movable table seating to accommodate different party sizes, making it more versatile for various celebrations.
Since its opening in 2004, Melting Pot Boise has been a go-to spot for practicing the Art of Fondue. The restaurant still features many original pieces from the old fire station, including the firepole, brick arches, and the original fire bell, adding to its unique charm. With the refreshed design, guests can enjoy their beloved fondue dishes while soaking in the cozy, historical ambiance.
"We are excited to see franchisees like Kim and Hollis build an amazing dining experience within their community," said CEO Bob Johnston. "Melting Pot has historically been a place to build special moment memories, and now, with our updated experience, it is for the frequent diner looking for an incredible, consistent perfect night out."
Melting Pot Boise is open Monday through Thursday from 4-9 p.m., Friday from 4-10 p.m., Saturday from noon to 10 p.m., and Sunday from noon to 9 p.m.
